Coconut cookies recipe
Ingredients
- 115gms butter
- 100gms dessicated coconut
- 150gm castor sugar
- 130 gms refined flour
- 1/4 tsp baking powder
- 1/4 tsp salt
- 2-3 tbsp milk
Instructions:
1. Preheat oven:
Preheat your oven to 180°C (350°F). Line a baking tray with parchment paper.
2. Cream butter and sugar:
In a mixing bowl, beat together the softened butter and powdered sugar until light and fluffy.
3. Add vanilla extract:
Mix in the vanilla extract for added flavor.
4. Combine dry ingredients:
In a separate bowl, whisk together the flour, desiccated coconut, and baking powder.
5. Make the dough:
Gradually add the dry ingredients to the butter mixture. Mix to form a soft dough. If it's too dry, add 1 tbsp of milk at a time until the dough comes together.
6. Shape the cookies:
Scoop out small portions of dough and roll into balls. Flatten slightly with your palms and place them on the prepared tray, leaving space between each cookie.
7. Bake:
Bake for 12–15 minutes or until the edges are lightly golden. Do not overbake; they will continue to firm up as they cool.
8. Cool and serve:
Let the cookies cool on the tray for 5 minutes, then transfer to a wire rack to cool completely.
