RED VELVET OREO CUPCAKES


RED VELVET OREO CUPCAKES 


INGREDIENTS 


  • 1¼ cups all-purpose flour
  • 2 large eggs
  • 1 cup granulated sugar
  • 1/2 cup butter, room temperature
  • ¼ tsp baking soda
  • 2 tbsp unsweetened cocoa powder
  • A pinch of salt 
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring
  • 12 Oreo cookies, crushed
  • 12 whole Oreo cookies for garnish

NOTES: If not using vinegar, increase baking soda to 1 tsp.


CREAM CHEESE FROSTING


  • 1/2 cup unsalted butter, room temperature
  • 8 oz cream cheese, softened
  • 4 cups powdered sugar
  • 1 tsp vanilla extract


INSTRUCTIONS 


● Preheat the oven to 350°F (175°C). 

Line a muffin tin with cupcake liners.

● In a bowl, cream together the butter and sugar until light and fluffy. 

Beat in the eggs one at a time.

● In a separate bowl, mix together the flour, cocoa powder, baking soda, and salt.

 Gradually add this to the butter mixture, alternating with the buttermilk. 

Stir in the vanilla, vinegar, and red food coloring until just combined.

 Fold in half of the crushed Oreos.

● Fill the cupcake liners two-thirds full with the batter. 

Bake for 18-20 minutes, or until a toothpick comes out clean.

● For the frosting, beat together the butter and cream cheese until smooth.

 Gradually add in the powdered sugar and vanilla, continue beating until creamy.

● Once the cupcakes are completely cool, pipe the frosting onto each cupcake, sprinkle with the remaining crushed Oreos, and top with a whole Oreo cookie.
