BUTTERSCOTCH ALMOND CRUNCH BARS 


INGREDIENTS


• 1/2 cup light corn syrup

• 1 cup sugar

• 1/2 Tsp baking soda

• 1/4 cup unsalted butter

• A Pinch of salt

• 1/2 Tsp vanilla extract

• 1/4 cup water

• 1 cup mixed nuts (almonds and peanuts), toasted and roughly chopped


INSTRUCTIONS 


● Line a baking sheet with parchment paper.

In a heavy saucepan, combine sugar, corn syrup, and water. 

● Cook over medium heat until sugar dissolves, stirring occasionally. 

Increase heat to high and cook until the mixture reaches 300°F (hard-crack stage) on a candy thermometer.

● Remove from heat; carefully stir in butter, salt, vanilla, and baking soda (mixture will bubble up).

● Quickly fold in the mixed nuts, then immediately pour onto the prepared baking sheet.

 Spread into a thin, even layer.

● Allow to cool and harden completely before breaking into pieces.
