 • 1 and 1/2 cups all-purpose flour

 • 1/2 cup granulated sugar

 • 2 teaspoons baking powder

 • 1/2 teaspoon salt

 • 1/2 cup milk

 • 1/4 cup vegetable oil

 • 1 large egg

 • 1 teaspoon vanilla extract

For the Streusel Topping:

 • 1/4 cup all-purpose flour

 • 1/4 cup packed brown sugar

 • 1/2 teaspoon ground cinnamon

 • 2 tablespoons cold unsalted butter, diced


 1. Preheat your oven to 375°F (190°C). Line a muffin tin with paper liners or grease well.

 2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.

 3. In another bowl, combine the milk, vegetable oil, egg, and vanilla extract.

 4. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.

 5. In a small bowl, mix together the streusel topping ingredients until crumbly.

 6. Fill each muffin cup about halfway with the batter. Sprinkle the streusel topping evenly over each muffin.

 7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.

 8. Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
